Excel makes it easy to hide and unhide columns.  This will also work the same for rows.  This works in Excel 2003, Excel 2007, and Excel 2010.
 

When you want to edit a cell in Excel you can click inside the cell and use F2 on your keyboard to edit inside the cell.  If you would rather the F2 key placed the cursor in your Formula Bar for editing, follow the steps in this tutorial.
